Easy Buttermilk Pancakes

These buttermilk pancakes are very simple to make and use ingredients that you might already have at home. Recipe contains affiliate links

Ingredients
  

dry ingredients

  • 1 cup all purpose flour (125g)
  • 1.5 tsp baking powder
  • .5 tsp baking soda
  • 1 tbsp granulated sugar
  • pinch of salt

wet ingredients

  • 3/4 cup whole milk
  • 2 tbsp white or apple cider vinegar
  • 1 large egg
  • 1 tsp vanilla extract optional
  • 2-3 tbsp melted butter optional see notes

Instructions
 

  • make your buttermilk by combining 3/4 cup if milk in a bowl and add the 2 tbsp of vinegar and set aside ofr 5 minute or more to develop into a bit thicker milk with a few lumps
  • combine all dry ingredients in a bowl and set aside
  • once buttermilk is ready, add egg, vanilla extract if using and mix
  • add wet ingredients to dry mix and whisk a bit, then add melted butter if using and whisk but do not whisk the mix completely and leave a few lumps (see video)
  • heat your griddle. I have a dash that I set to 4. make sure griddle is hot before spreading some butter or oil all around
  • I used a 3 tbsp cookie scoop to scoop the mix onto the griddle. This would make pancakes that are about 4 inches in diameter.
  • griddle one side for about 4 minutes or until golden brown, flip and griddle next side for 2-3 minutes or until golden brown

Notes

you don't have to add melted butter to the mix but you will have to add it to griddle or pan you are using to give the pancake flavor and help brown it. 
do not overmix the pancake mix. You want to leave a few lumps to ensure that the pancake comes out fluffy and light, not gummy
add chocolate chips like I did in my video or add blueberries or nuts
serve with bananas, maple syrup, honey or topping of your choice or my blueberry sauce
