Servings 40 cookies

Equipment

  • Large baking pans

Ingredients

  • 5 1/4 cup all purpose flour - 630 to 660 grams
  • 1.5 tsp baking powder
  • 1 tsp baking soda
  • 1 1/4 cup granulate sugar
  • 1.5 cup butter- 3/4lb
  • 4 large 2 for dough-2 for brushing on top of cookie
  • 2 tbsp vanilla extract
  • 2 tbsp orange juice see note
  • sesame seeds-optional

Instructions

  • preheat oven to 350 degrees and prepare large baking pan with silicone mat or parchment paper and set aside
  • Start by combining flour, baking soda and baking powder- set aside
  • Cream Butter and sugar until light and fluffy 8-10 minutes
  • Add egg one at a time, add one, mix well and then add the second and mix. add vanilla and orange juice and mix
  • Add flour by thirds and mix, you might not need all the flour. As you add and mix, take a piece with your hand, if you can easily form it without sticking, you are done. hile you form the dough, you can also lightly flour your hands.
  • Each dough ball should weigh 30-40g. 2 tbsp cookie scoop equals roughly 30g. This smaller size makes more cookies. For this recipe, I weighed each ball at 40grams. W hich gives a larger cookie. See video for comparison.
  • Remember to brush tops with egg and add sesame seeds if you like. Bake 20-25 minutes or until top is a medium golden color like mine
  • Enjoy with warm milk like my aunt served them in Greece, or coffee or tea. Store in airtight container. Cookies keep for long, about 2 weeks.
